DUTIES

The primary responsibility of the culinary staff is to provide the highest quality of service to guests at all times, and to coordinate with the shift supervisor and/or the Executive Chef on all daily and special function menus. The Cook will assist the shift supervisor in the preparation and presentation of all meals served in the dining hall and other facilities.

Responsible for breakfast, lunch, and dinner preparation; set up and replenishing during service, and break down of the hot entree line

Responsible for preparing entrees, starches, and vegetables for the hot line for each service

period

Responsible for preparing and delivering all food items and equipment needed for picnic and cookouts and cleaning up as business requires

Follow recipes and/or product directions for preparing, seasoning, cooking, tasting, carving, and serving soups, meats, vegetables, fruits, garnishes, and other foods

Food preparation will include operating a variety of kitchen equipment to measure and mix ingredients, washing, peeling, cutting and shredding fruits and vegetables, and trimming and cutting meat and poultry. Report all malfunctioning equipment to the supervisor.

Taste food products, read menus, estimate food requirements, check production, and keep records in order to accurately plan production requirements

The Cook may be called upon to select recipes per menu cycle, receive, inventory, move, and lift foodstuffs and supplies

Follow proper food production methods to ensure that extra food products be recycled or disposed of properly to manage food waste

Responsible for cleaning all equipment and utensils used in the production area

Responsible for kitchen cleanliness, sanitation, and safety in the hot entree production area as described by the posted cleaning schedule

Assist in the education of other culinary staff members as well as explaining to dining hall staff various menu items

May be called upon to assist Line Attendants as needed

Assist culinary staff with special functions when called upon

Schedule will vary to meet the needs of the client

At times all culinary staff will be called upon to stock orders received from food purveyors

Reports directly to the shift supervisor

May be assigned to other duties as required by the Executive Chef and shift supervisor

QUALIFICATIONS

Minimum two years' culinary experience preferred

Must possess standard culinary skills such as sauteing, braising, roasting, poaching, baking, frying, etc.

Work is assigned orally and in written form; individual must be able to interpret menus and recipes, and be able to follow directions.

Good visual and communication skills

Knowledge of the variety of foods and recipes offered on the four-week cycle menu

Ability to record information to the culinary production sheets

Willing to work in other areas in the kitchen as staffing and business dictates

Must be flexible and willing to work according to meal requirements

Ability to meet the physical demands of the position such as standing for long periods, walking, bending, reaching, lifting up to 30 lbs., etc.

Knowledge of industry standards regarding sanitation

Must be willing to maintain a high standard of personal hygiene and meet GSI policy regarding dress codes

All employees are required to wear provided uniforms and safety shoes while on duty. The uniforms must be clean, in good condition and changed daily. Uniforms should not be worn to and from work. Shoes must be kept clean and in good condition.

Valid driver's license

Must develop a knowledge and understanding of policies, notices, rules, and regulations

Must have or willing to obtain top secret clearance
